For the Crust
- 3 ¾ C almond flour

- ½ tsp salt
- ½ C butter
- 1 egg
- ½ tsp vanilla
- 1 tbsp gelatin powder
- 2 tbsp water
Instructions
- Using a small bowl, mix the gelatin powder with 3 tbsp of lemon juice. Let rest.
- Heat large saucepan over medium heat. Add the powdered sweetener and 3 tbsp of lemon juice.
- Add cinnamon, nutmeg and cardamom.
- Allow to thicken and gelatin to dissolve.
- Add the squash to the pan. Let simmer for about 40 minutes.
- Stir in maple extract.
- Set aside to cool.
- Heat oven to 350.
- Line bottom of 9 in round pie pan.
- Grease well.
- Whisk together almond flour and sweetener in a bowl. Add the salt as well.
- Add gelatin and water. Mix well with hand mixer.
- Divide in half.
- Press into the lined pan and up onto the sides.
- Set second half of the dough aside.
- Bake for 12 minutes.
- Let cool for 10 minutes.
- Put remaining dough between two oiled pieces of parchment paper and roll out. Make the circle slightly larger than the pie pan.
- Re heat oven to 350 if you turned it off.
- Put filling into the pan.
- Take parchment off one side of the rolled top crust.
- Lay over the pie and press edges to seal. Remove the other sheet of parchment.
- Cut four slits in top of pie.
- Bake 25 minutes.
- Cover edges of pie with foil and cook another 15 minutes.
