  •         1 and ½ C almond flour
  •         ¼ C powdered sweetener
  •         1 tsp cinnamon
  •         6 tbsp melted butter


  •         6 packages of 8 oz cream cheese at room temp
  •         2 C powdered sweetener
  •         5 large eggs room temp
  •         8 oz sour cream room temp
  •         1 tbsp Vanilla

You will need a springform pan as well


  1. Preheat your oven to 325. Put rack in the middle of the oven.
  2. Combine the crust dry ingredients in medium bowl. Mix in the butter. Pour crust mixture into a 10 x 14-inch springform pan. Press to the sides with your fingers. Use a flat-bottomed cup to help push against the bottom and sides.
  3. Refrigerate crust for 20 mins.
  4. Using larger missing bowl, beat the cream cheese with a hand mixer until it is light and fluffy. You can also use a stand mixer with the paddle attachment.
  5. Include sweetener a little at a time and beat into mix.
  6. Add room temp eggs one at a time and mix well.
  7. Add vanilla and sour cream and beat in until just mixed.
  8. Pour the mix into the crust and smooth out the top. Bake for 50 minutes
  9. If done, the top will be glossy and not jiggle.
  10. Turn off the over, crack the door. Let rest for 30 minutes.
  11. To remove from pan, use a sharp paring knife but keep the spring form on for another hour.
  12. Wrap in plastic wrap and refrigerate for 8 hours.
  13. Remove springform. Slice up.

If you want to remove the nuts, use sunflower seed flour. If you want to exclude the crust, you can just line the springform with parchment paper and butter the sides and bottom. The recipe was made for a large springform pan, so if you use another size you might have left over filling.

To make it a pumpkin cheesecake, replace the sour cream with pumpkin puree and 1 tsp of pumpkin pie spice.

Always make sure that everything in the cheesecake is room temp when you are preparing the cake. Skipping this step will make the cheesecake consistency incorrect. You can freeze the cheesecake as well! Freeze the whole thing or warp individual slices in plastic wrap and store them in the freezer. Keeps for up to 2 weeks.
