  •         2.5 lb beef brisket
  •         ¼ cup keto friendly BBQ seasoning. Always buy a sugar free blend
  •         2/3 cup water
  •         2 tbs avocado or light oil
  •         4 slices peeled onion
  •         2 tbs low sugar ketchup
  •         2 tbs apple cider vinegar

How to Make it

  1.       Rub both sides of the brisket with your seasoning of choice
  2.       Heat the oil in the instant pot on the sauté setting
  3.       Place the brisket into the pot and sear 3 minutes on each side
  4.       Use tongs to remove the brisket and add the onion slices to the bottom of the pot
  5.       Place the brisket back in the pot on top of the onions, fat side up
  6.       Whisk together water, apple cider vinegar and ketchup. Pour this mixture around the brisket in the bottom of the pot.
  7.       Cover the instant pot, lock the lid and use the pressure cook setting. Cook for 60 minutes.
  8.       When cooking is done, quick release the pot.
  9.       Unlock the lid and remove it.
  10.       Place brisket on a cutting board and let it rest for 10 minutes.
  11.       Slice the brisket and serve with onions and juice from the pot.

Ingredients

  • 1.5 lbs ground beef
  • 2 tbsp chopped parsley
  • 2 eggs
  • ½ C almond flour
  • ¾ C Parmesan cheese
  • 1 tsp kosher salt
  • ¼ tsp garlic powder
  • 1 tsp dried onion flakes
  • 7/4 tsp dired oregano
  • ⅓ C warm water
  • 1 tsp olie oil for cooking
  • 3 C keto marina sauce

  • Combine meatball ingredients in a medium bowl. Mix thoroughly.
  • Form into 15 2 inch meatballs.
  • Coat bottom of instant pot with olive oil.
  • Saute if you want to brown the meatballs.
  • Layer the browned meatballs in the pot, leaving ½ in between them.
  • Pour your marinara sauce over them.
  • Seal the pot and cook on low pressure for 10 minutes.
  • Vent the steam.
  • Remove lid and serve!

Instant pot Corned Beef

Ingredients

  • 3 lb corned beef
  • 1 small head green cabbage. Cut into 8 wedges
  • 2 C baby carrots
  • 5 C water

How to Make it

  1. If the corned beef is cured, you can rinse and drain to remove excess salt.
  2. Place in the pot and include juices from the packaging.
  3. Put water in the pot.
  4. Cover and lock. Cook for 90 mins on high.
  5. Quick release the pot.
  6. Check if the meat is done. Cook another 10 minutes if not done.
  7. Add cabbage wedges and carrots to pot. 
  8. Cover and lock lid. Cook 5 more minutes at high pressure.
  9. Quick release again.
