You will need:

  •         1 tbs oil
  •         1 lb chicken thighs or breasts
  •         2 cloves garlic
  •         1 small onion ( chopped)
  •         1 lemon
  •         ¾ cup chicken broth
  •         1 tsp rosemary
  •         1tsp thyme
  •         Salt and pepper
  •         ¼ tsp cornstarch or other thickening agent
  •         1 tbs butter

Procedure:

  1.       Chop up a small onion and mince some garlic.
  2.       Set instant pot to sauté and add oil to the inner pot. Brown both sides of chicken. If using chicken thighs, brown the skin side thoroughly.
  3.       Take the chicken out of the pot and set aside. Note: It does not have to be cooked all the way through at this stage.
  4.       Add onion and garlic to the pot and sauté until soft. Add chicken broth, herbs, seasonings and lemon juice. Make sure to scrape the browned bits off the bottom of the pot for extra flavor.
  5.       Put your chicken back in the pot.
  6.       Secure the lid and set the valve to the sealing position. Choose the pressure cook setting and cook on high for 12 minutes. If using breasts, cook for 8 minutes.
  7.       Allow the pot to do a natural release. This means that you will just turn it off and let the steam release on its own.
  8.       Open pot and remove the chicken.

  10.   Simmer the sauce until it has thickened up. Stir in the butter until melted.
