  •         10 egg whites room temp

  •         ½ tsp vanilla

Instructions

  1. Put oven rack in second to lowest slot.
  2. Heat oven to 325.
  3. Line pan with parchment paper.
  4. Do not grease your pan.
  5. Using smaller bowl, whisk together the sweeteners.
  6. Using large bowl, whisk together the protein powder, almond flour, half the mixed sweetener and salt.
  7. Sift flour mix back and forth between the two bowls three times.
  8. If you don’t have the ability to sift the flour, use fork to fluff it for a few minutes.
  9. In another large bowl, beat egg whites with cream of tartar until frothy.
  10. Slowly add leftover sweetener until you can make stiff peaks.
  11. Mix into the flour mix in four parts and combine well.

For Frosting

  •         8 oz cream cheese, softened
  •         ½ C butter softened
  •         1 C powdered swerve
  •         1 tsp vanilla
  •         ½ C heavy whipping cream room temp

For Topping:

  •         2 tbsp shredded coconut lightly toaste
  •         2 tbsp chopped pecans roasted slightly

Instructions

  1. Heat oven to 325.
  2. Grease two 8 x 9 in baking pans well.
  3. Line with parchment paper and grease again.
  4. Using large bowl, beat butter and sweetener well.
  5. Add egg yolks one at a time and mix well each time.
  6. Add heavy cream and vanilla extract.
  7. In another bowl, mix the almond flour, coconut, pecans, coconut flour, baking powder and salt.
  8. Beat into butter mix until just combined.
  9. Using another bowl, beat egg whites with cream of tartar until you can make stiff peaks.
  10. Divide batter evenly into the pans.
  11. Bake 35 to 45 mins. Edges should be golden and the middle firm.
  12. Remove and cool completely.
  13. Flip out onto wire rack.
  14. Make frosting by mixing cream cheese and butter until smooth. Add sweetener and vanilla until well mixed.
  15. Add whipping cream a bit at a time until silky and smooth.
  16. Put bottom layer of cake onto a serving plate and them cover with 1/3 frosting.
  17. Put the next layer of cake on and top entire cake with frosting.
  18. Sprinkle top of cake with toast coconut and pecans.
  19. Put in fridge to set for a half hour.
