Instructions

  1.       In a large bowl, beat butter until light and fluffy with ah and mixer. Addin the sugar, salt, and vanilla and mix until combined.
  2.       Add almond flour a little bit at a time until the consistency becomes dough.
  3.       Add the dark chocolate chips and mix.
  4.       Cover with plastic wrap and put in fridge to cool for 10-15 minutes.
  5.       Take dough out of fridge and use a cookie scoop or a measuring spoon to form 1-inch balls. Place them on a rimmed baking sheet that is lined with parchment paper.
  6.       Using a microwave-safe bowl, melt the sugar-free chocolate chips in 30-second increments until it is smooth.

  1.       Preheat your oven to 350 degrees.
  2.       Line a large baking sheet with parchment paper.
  3.       Using a hand mixer or a stand mixer, beat together the butter, cream cheese and sweetener until it’s light in color and fluffy.
  4.       Add vanilla extract, salt and egg. Beat together.
  5.       Beat in the sour cream if you are using it.
  6.       Add almond flour ½ cup at a time. Dough will be dense and slightly crumbly but will stick together when pressed.
  7.       Using a cookie scoop (about 1 and ½ tbsp), form balls from the dough and put on cookie sheet. Flatten with your palm.
  8.       Bake for 15 minutes until the edges are lightly golden in color.
  9.       Allow to cool completely before handling.
