Combine cream, sweetener, vodka, vanilla, xantham gum and salt in a wide-mouth pint jar. Blend cream mix with an immersion blender in an up and down motion until the cream had gotten thick enough to form peaks. This will take 60-75 second. Cover the jar and freeze for 3-4 hours. You will need to stir it every 30 to 40 minutes.

Keto Pumpkin Cheesecake Cupcakes

Ingredients

  •         16 oz cream cheese, room temp
  •         2 large eggs at room temp
  •         ½ C cup pumpkin puree
  •         1 tbs pumpkin pie spice
  •         ½ C sweetener like monkfruit
  •         1 tsp vanilla
  •         1/8 tsp salt

Instructions:

  1.       Preheat oven to 350 degrees. Line 12 muffin cups with paper liners.
  2.       Beat together the cream cheese and the eggs until smooth and creamy.
  3.       Add pumpkin, sweetener, pumpkin pie spice and vanilla to the cream cheese mix. Mix until smooth and creamy. Do not overmix.
  4.       Pour batter into the 12 muffin wells evenly.
  5.       Bake for 20 minutes until slightly jiggly in the middle.
  6.       Cool completely on the counter and then finish cooling in the fridge.
  7.       Serve cupcakes with a side of your ice cream and enjoy!

  • 2 1/2 C Almond flour
  • ½ C coconut flour
  • 1 tsp ground flaxseed meal

  • ½ tsp onion powder
  • ½ tsp ground rosemary

Instructions

  1. Preheat oven to 325. Line baking sheet with parchment papers.
  2. Whisk together flours, the flaxmeal and rosemary, onion powder and the salt.
  3. Add eggs and oil and combine.
  4. Mix until you had a large ball of dough.
  5. Sandwich between two layers of parchment and roll to ¼ in thick.
  6. Cut into squares and move to baking sheet.
  7. Bake until golden. About 12 to 15 minutes.

  • 4 tbsp butter
  • 1 C turkey drippings
  • 2 C low-sodium beef broth
  • 2 tsp worcerstershire sauce
  • Salt
  • Pepper
  • ½ tsp xantham gum

To Cook:

  1. In medium skillet, melt butter over medium heat. 
  2. Add pan drippings and broth slowly. Whisk until smooth.
  3.  Add worcestershire and garlic powder and then add salt and pepper.
  4. Reduce heat and simmer for 10 minutes.
  5. Add xantham gum and whisk.
  6. Simmer 5 to 10 minutes more.
  7. Allow to cool and it will thicken up!

Keto Cheese Taco Shells

  • 2 C cheddar cheese shredded

Instructions:

  1. Preheat oven to 375.

  3. PLace cheese in circles on the baking sheet with even thickness.
  4. Sprinkle with cumin and chili powder
  5. Bake 5-7 minutes.
  6. Using wooden spoons set horizontally across two overturned glasses.
  7. Remove pans from oven and let cook for 1 minute.
  8. Use spatula to lift cheese circles off baking sheet and hang over spoons. Let harden for 5 minutes.
