Keto Paleo Bread
One of the often over-looked ways of making bread involves the use of non-traditional flours that are better for you than simple white flour. Many of us grew up with our mom making traditional style bread using white or wheat flour and do not realize that there are healthier options out there.
Paleo recipes harness the traditional baking knowledge of times when we ate less processed foods and we were healthier. Many of these recipes are also far easier to follow than you think and they use less ingredients that you might imagine.
As awareness of the need to eat healthy has become more mainstream, many grocery stores carry alternative baking ingredients and flours, making it easy to make keto bread than ever before!
For those who have had stiff, hard, or tasteless alternative breads before, this recipe will change your mind! It comes out with just the right texture and it even toasts well! Best of all, at 82 calories, and 1 gram of carbs per serving, it’s good for you and won’t make you feel sleepy and overly full like a regular bread!
What Will I Need?
You will need almond and coconut flour, baking powder, some butter and some egg whites. You will also need a good processor. Make sure that you buy a quality almond and coconut flour. Using low quality products will just lead to a heavy or tasteless bread that you will not enjoy.
If you want to add some sweetness to the bread, you can use erythritol or coconut sugar. Add xantham gum for a sturdier and chewier loaf. If you hate whipping egg whites into shape, you can use cream of tartar to speed up that process as well.
Avoid a non-stick pan as the bread tends to stick to it. You can use greased parchment paper if you want to make it easier to remove from the pan. You do not have to grease the parchment paper but some people prefer to.
- 1 C almond flour
- ¼ C coconut flour
- 2 tsp gluten-free baking powder
- ¼ sea salt
- 1/3 cup butter melted
- 12 large egg whites
- 1 ½ tbsp erythitol (optional)
- ¼ tsp xantham gum (optional)
- ¼ tsp cream of tartar
How to make keto bread recipes

- Heat oven to 325 degrees. Line loaf pan with parchment paper so that it hangs over the sides some.
- Combine dry ingredients in a food processor and pulse until combined well. Now add the melted butter. Scrape down the sides as needed until the mixture is crumbly.
- Beat your egg whites until they make stiff peaks. Add the cream tartar before you whip them if you prefer using it. Pulse in half of the egg whites into the dry mixture. Then fold the remaining egg whites into the mixture. This method makes the bread fluffier and cannot be skipped if you want a light and airy bread. Make sure that you do not see any chunks or streaks when you fold in your egg whites. Do not fold aggressively or you’ll push the air out of the mixture.
- Transfer your dough to a parchment-paper lined baking pan and bake for 40 minutes. The top should be golden.
- Tent the top of the loaf with foil and cook for another 30-45 minutes. The top will be firm and the loaf will not make a squishy sound if you push on it when it is done. Internal temp will be 200 degrees.
- Cool completely before you serve.
This recipe makes great sandwich bread for those who are trying to stick to the keto diet and miss eating sandwiches. Perhaps the best part of all, is that this recipe is so tasty that the rest of the family will eat it too! It freezes well also, making it easy to make a few loaves and then keep them on hand. This is one of the easiest keto bread recipes out there and it is unusual because it stores so well. Most paleo or keto breads do not keep long term. Always slice your loaf up before you freeze it.
If your loaf gets a little too moist because it has been sitting out too long, you can use it for toast or even turn it into bread crumbs for other recipes.
Always remember that making bread is a bit of an art form and that you need to follow the measurements and the timing in the recipe to the letter to get the right result. If you stick to the instructions, you will come out with perfect bread every time! Happy keto baking!
