These handy little breakfast bites are an easy way to make breakfast ahead to keep you on track on busy days or during the work week. The great thing about these handy little egg bites if that you can customize them to add any ingredients that you want. Anything from veggies to bacon is allowed.
Ingredients:
- 10 large eggs
- 1-1/2 tsp sea salt
- ¼-1/2 tsp black pepper
- For ham and cheese, add ½ tsp garlic and onion powder as well as ½ tsp Dijon mustard. Also add 2/3 C grated cheddar cheese and ¾ cup chopped ham.
- For Buffalo chicken, add 1/3 C buffalo sauce, 1/3 C chopped green onion and 1 C chopped, cooked chicken.
- For Broccoli and Cheese, add ½ tsp dried thyme, ½ tsp garlic powder, 1 and ½ C broccoli and 2/3 C grated cheddar cheese.
There are many other variations but these are some basic ideas.
Instructions:
- Preheat the oven to 400 degrees. Line a 12-count muffin tin with silicone liners or use non-stick cooking spray.
- In a large measuring cup or a mixing bowl, crack the eggs and whisk in salt and pepper.
- For ham and cheese whisk in the garlic and onion powders. Add ham and cheddar and divide evenly into the muffin cups until they are about 2/3 full. Top with ham and cheese and bake for 12-15 minutes.
- For buffalo chicken, whisk in garlic powder and buffalo sauce. Stir in green onions and divide into muffin cups, filled 2/3 full. Using a spoon, evenly distribute chicken into the muffin cups. Bake 12-15 minutes.
- For broccoli and cheese, whisk in the garlic powder and stir in broccoli and cheddar. Divide evenly into the muffin tins and fill 2/3 full. Sprinkle with cheddar if you want and bake for 12-15 minutes.
Each bite is 137 calories and offers 6 g of protein!
Keto Breakfast Burrito

If you love a good breakfast burrito and thought you would have to give them up on the keto diet, you were wrong! One of the best keto breakfast recipes is this one for a modified breakfast burrito that anyone would love!
Ingredients:
- 1 tbsp butter
- 2 medium eggs
- 2 tbsp full fat cream
- Choice of herbs and spices and fillings
- Salt and pepper
Instructions:
- Using a small bowl, mis your eggs, the cream and any herbs and spices you want to add to the mix.
- Melt the butter in a frying pan and then pour in the eggs.
- Swirl the pan slowly until the mix is evenly spread and thin.
- Place a lid over the eggs and let cook for 2 minutes.
- Lift the eggs carefully out of the pan and put on a plate.
- Add your favorite fillings and roll up.
- Enjoy!
The burrito is 330 calories before adding fillings and brings to the table 11g of protein!

Keto Pancakes
If you thought that there was no keto breakfast recipe for pancakes, think again!
Ingredients:
- 3 eggs
- ½ C cottage cheese
- 1/3 C superfine almond flour
- ¼ C unsweet almond milk
- 2 tbsp truvia
- Vanilla extract
- 1 tsp baking powder
Instructions:
- Put ingredients into your blender or bowl in the order listed. Blend to a smooth liquid consistency.
- Heat non stick pan on medium high and spray with cooking spray or use butter.
- Use 2 tbsp of batter at a time to make small pancakes. The batter is delicate, so it will not make bigger cakes.
- Cook each until the top pancake shows small bubbles. When the bubbles disappear, about 1 to 2 minutes.
- Using a spatula, gently loosen the pancake and flip.
- Serve hot!
Each serving is 257 calories with 18 g protein!
Keto Breakfast Sandwich

Ingredients:
- 2 sausage patties
- Egg
- 1 tbsp cream cheese
- 2 tbsp sharp cheddar
- ¼ medium avocado
- ¼ tsp sriracha
- Salt and pepper
Instructions:
- Heat skillet over medium heat.
- Cook sausages.
- Mix creamcheese and sharp cheddar in a bowl.
- Microwave for 20-30 seconds until melted.
- Mix cheese with sriracha.
- Mix egg with seasoning and make small omelette.
- Fill omelette with cheese mix and assemble sandwich.
- Enjoy!
