  •         4 lg eggs
  •         ¾ C almond milk
  •         ¼ C Avocado oil
  •         2 tsp vanilla extract
  •         2 ½ C blanched almond flour

  •         2 tsp baking powder
  •         ¼ tsp salt

To Make Them

  1. Combine eggs, almond milk, oil and vanilla in a blender. Blend for 30 seconds. Add almond flour, sweetener, baking powder and salt. Blend again until smooth.
  2. Let rest for 5 minutes.
  3. Heat skillet over medium-low heat and lightly grease. Use 3 tbsp of batter per pancake and spread into 3-4 inch circle.
  4. Cook until bubbles start to appear on the tops and edges are dry.
  5. Carefully flip the pancakes and cook until golden brown on second side.

To Make Waffles

  1. Preheat the waffle iron and grease.
  2. Add 1/3 C of batter to center of iron and spread to edges.
  3. Close lid and let cook until puffed and golden brown.
  4. Remove and repeat until all batter has been used.
