Ingredients

  •         2 tbsp olive oil
  •         2 cloves minced garlic
  •         5 stalks of celery minced
  •         2 ½ C soy meat (crumbled)
  •         2 tsp chili powder
  •         1 ½ tsp cinnamon
  •         4 tsp cumin
  •         1 ½ tsp smoked paprika
  •         2 large chipotle peppers in adobo (minced)
  •         2 diced zucchini
  •         8 oz cremini mushrooms (mince these in a food processor)
  •         2 green bell peppers (diced)
  •         1 15 oz can diced tomatoes
  •         1 ½ tbsp tomato paste
  •         3 C water
  •         ½ C coconut milk
  •         1 C raw walnuts
  •         Salt and pepper
  •         1 tbsp unsweetened cocoa powder
  •         1 sliced avocado
  •         2 tbsp sliced radishes
  •         2 tbsp fresh cilantro

To Make it

  1.       Heat oil in large pot over medium heat. Add your celery and cook for 4 minutes. Add in the garlic, cinnamon, chili powder, cumin and paprika. Stir for about 2 more minutes
  2.       Add bell peppers, zucchini and mushrooms. Cook for 5 minutes
  3.       Add chipotle, tomato paste, tomatoes, water, coconut milk, soy meat, walnuts and cocoa powder. Reduce heat to medium-low and simmer for 20-25 minutes until thickened. Vegetables should be soft.
  4.       Season with salt and pepper to taste. Top with avocado, radishes and cilantro if desired.

Ingredients

  •         2 tbsp olive oil
  •         2 large diced bell peppers
  •         1 large diced onion
  •         4 minced garlic cloves
  •         1 medium head of cauliflower (cut into 1-inch florets)
  •         2 C green beans (trim and cut into 1-inch pieces)
  •         2 14.5 oz cans of diced tomatoes
  •         8 C chicken broth
  •         1 tbsp Italian seasoning
  •         2 dried bay leaves (optional)
  •         Sea salt to taste
  •         Black pepper to taste

To Make it

  1.       Heat your oil in pot or a Dutch oven over medium heat.
  2.       Add onions and bell peppers. Sauté for 7 to 10 minutes. Onions should be translucent and browned.
  3.       Add minced garlic. Sauté for another minute.
  4.       Add cauliflower, green beans, diced tomatoes, broth and Italian seasoning. Add bay leaves if using and salt and pepper to taste.
  5.       Bring soup to a boil. Cover, reduce heat to medium low and let cook for 10-20 minutes. Veggies will be soft when done.
